Watermelon (Citrullus lanatus (Thunb.) Mansfeld) is a popular food highly appreciated by Brazilian consumers due to its sweetness and freshness. It also has high antioxidant capacity, due to the functional compounds present, such as vitamin C, carotenoids and phenolic compounds. The new mini-watermelon hybrids are a good alternative in the watermelon market, with the advantages of smaller size, differentiated pulp colors and absence of seeds. Thus, the objectives of the present study were to produce four mini-watermelon hybrids in the field - Champagne, Fenway, Sharoline and Smile, in order to carry out a screening on the fruits, evaluating physicochemical and biochemical characteristics; and to analyze the acceptability of mini-watermelon by consumers in the state of Mato Grosso. The study was divided into two stages. In the first, the hybrids were simultaneously cultivated in the open field and submitted to identical agronomic practices. In the laboratory, the fruits were evaluated for physicochemical and biochemical characteristics, being sampled three areas of the fruit: central endocarp, distal endocarp and mesocarp. Soluble solids, pH, titratable acidity, ratio, levels of vitamin C, lycopene, β-carotene, flavonoids, phenolic and total phenolic acids and the antioxidant potential were analyzed using different methods - scavenging of ABTS radicals, DPPH and reducing power. of iron, in the different areas of the fruit. In the second stage, the consumer's acceptability and preference will be evaluated through the application of a semi-structured questionnaire, with open and closed questions with the producers of Nova Mutum-MT, in addition to a survey with a wider public via a questionnaire applied through the Google Forms platform. Among the mini-watermelon hybrids evaluated, 'Smile' stood out due to the superiority of soluble solids and ratio, which should strongly influence its consumer preference. 'Sharoline' and 'Champagne' were the hybrids with the highest content of vitamin C. 'Smile' and Sharoline presented the best results regarding the content of functional compounds, having higher contents of lycopene, β-carotene, flavonoids, phenolic and total phenolic acids. , giving them good results of antioxidant activity. ‘Champagne’ stood out due to the good results of ratio, vitamin C, phenolic and total phenolic acids and antioxidant activity. The low levels of lycopene give this hybrid the yellowish color of the endocarp, which combined with its flavor makes it a differentiated mini-watermelon option. Finally, the central endocarp of the mini-watermelon is the part of the fruit richest in functional compounds and with the highest antioxidant activity. However, the distal endocarp is also a region rich in functional compounds, mainly carotenoids in ‘Smile’ and ‘Champagne’. The mesocarp is a part of the fruit rich in phenolic compounds, mainly in 'Fenway' and 'Sharoline', indicating a potential use of this part of the fruit for food and agro-industrial use.
