RESUMO:
The economic importance of cassava (Manihot esculenta Crantz) is due to the interest in its starchy roots,
used in human and animal food, its use in the manufacture of food products and other industrial branches.
The genus Manihot has natural genetic variability, which favors research projects aimed at genetic improvement
with cultivated cassava. The combination of agronomic characters, such as high productivity and high starch
content, are essential for the selection and recommendation of cassava cultivars. Thus, this study aims to carry
out the molecular and culinary characterization of cassava ethnovarities cultivated in the north of the state of
Mato Grosso, as well as the effect of packaging and storage time on the conservation of minimally processed roots.
